Caribbean Green Seasoning

Versatile Caribbean Green Seasoning is the perfect sauce to have on hand, it is so easy to prepare at home, made with a blend of fresh herbs and vegetables. Great for stews, sauces, curries, soups or use as a marinade.

What Is Green Seasoning?

  The recipes vary from household to household and from island to island. Green seasoning is a blend of herbs from the Caribbean, traditionally it is blended and stored in the refrigerator for use as a marinade for meats, stews, curries, and rice dishes.


It is used mostly in savory dishes or recipes including marinating meat, stews, bbq, soups, sauces, condiments, vegetables, rice, and pasta. It’s my go-to secret ingredient.

How To Make Green Seasoning


  • 1 medium onion
  • 1 medium green bell pepper
  • 1 medium yellow bell pepper
  • 1 medium red bell pepper
  • 1 bunch of cilantro, washed and patted dry
  • 1 bunch of parsley, washed and patted dry
  • 10 garlic cloves
  • 1 tablespoon freshly grated ginger
  • 2 teaspoon dried oregano
  • 2 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon white vinegar
  • 1/2 cup olive oil
  • 2-3 tablespoons water


  1. Cut onion, bell pepper, cilantro, parsley and garlic gloves into small pieces.
  2. Add all ingredients to a food processor or blender. Pulse until all ingredients are chopped into small pieces and blended together.

How long does green seasoning last in the refrigerator or freezer? 

If you want your seasoning to stay bright green, up to five days. After that time period, it will be still good for up to 2 weeks
