Required Equipment

  • air fryer
  • medium size saucepan
  • medium size metal bowl
  • whisk
  • measuring cups
  • measuring spoons
  • large circle cookie cutter
  • cutting board
  • baking sheet
  • small glass bowl

Ingredients Needed

  • 1 package refrigerated pie dough
  • 1 egg, beaten
  • 1 cup Lemon curd

Lemon Curd Ingredients

  • 8 egg yolks
  • 1 3/4 cups granulated sugar
  • 3/4 cup oz freshly squeezed lemon juice (4 large lemons)
  • pinch of salt
  • 2 tbsp grated lemon zest
  • 1/2 cup chilled unsalted butter, sliced

Icing Ingredients

  • 1 cup powdered sugar
  • 1/2 lemon

Instructions

  • Add an inch or so of water to a medium-sized saucepan.
  • Using medium-high heat, bring the water to a simmer.
  • While the water is heating up, Place the yolks and sugar into a medium-sized bowl and whisk vigorously until smooth.
  • Add in the lemon juice and salt, and whisk until smooth.
  • Once the water reaches a simmer, reduce the heat to low and place the bowl over the saucepan.
  • Cook whisking constantly.
  • Whisk for 20 to 22 minutes. The mixture looks a light yellow color. Do not allow the mixture to boil or it will curdle.
  • Remove the mixture from the heat and whisk in the lemon zest.
  • Add butter gradually, one piece at a time, whisking well to combine
  • Transfer to an airtight container and refrigerate.
  • Now it’s time to make the hand pies.
  • Preheat the air fryer.
  • Make the filling.
  • Spread flour on the top of the large cutting board to coat.
  • Lay the pie crusts and gently roll them out to ¼” thickness.
  • Use the circle cookie cutter cut out 6 circles.
  • Place the circles of dough on a baking sheet.
  • Place 1 tbsp of filling in the center of the pie dough.
  • Brush the edges of the pie dough with beaten egg.
  • Fold the dough over, and press the dough down with your fingertips to seal closed.
  • Use a fork to press around the outside of the dough, leaving indentations on the edges.
  • Brush the top of the pies with beaten egg.
  • Sprinkle the top with sugar lightly.
  • Place the uncooked hand pies into the air fryer two at a time.
  • Cook on 380′ for 8-10 minutes or until golden brown and flaky.
  • While you’re cooking the pies, you can make the icing.
  • Add the icing ingredients to a small bowl.
  • Mix with a whisk until well combined.
  • Let cool slightly and top with an icing drizzle.
